Vanilla Pear Toast
Sure to be an incredible addition to your next special occasion brunch, we paired Vanilla Pear tea compote with a luscious vegan cashew spreadable cheese, on top of a crusty piece of sourdough.
Vanilla Pear Toast
Ingredients
For the Vanilla Pear Compote- 6 Bartlett pears
- 2 tbsp lemon juice
- ¼ cup honey
- ½ tsp ground cinnamon
- ½ tsp ground nutmeg
- 1 tsp pure vanilla extract
- pinch of salt
- 3 Tea Forté Vanilla Pear pyramid tea infusers, or about 6 tsp loose leaf tea* (If using loose tea, scoop tea into a loose tea filter bag before steeping)
For the Vanilla Pear Cashew Cheese
- 2¾ cups raw cashews, soaked overnight
- 3 Tea Forté Vanilla Pear pyramid tea infusers, or about 6 tsp of loose-leaf tea* (If using loose tea, scoop tea into a loose tea filter bag before steeping)
- 1 cup water
- ¼ cup honey
- ⅛ tsp salt
- ½ tbsp pure vanilla extract
- ½ tbsp apple cider vinegar
- ⅛ tsp vanilla bean powder
- zest of 1 lemon
- 1 loaf sourdough bread
- 1 pomegranate, seeded
- ¼ cup honey
- 1 tbsp ground cinnamon
Directions
For the Vanilla Pear Compote- Cut the pears removing seeds and stem. Slice into ¼ inch cubes with skins on. Add the pears to a small pot with the remaining compote ingredients and bring to a boil. Once boiling, reduce heat and simmer 35-40 minutes, stirring occasionally. Compote is done when pears are soft and the liquid has thickened into a syrup.
- When done, remove from heat. Rremove and discard the pyramid tea infusers (or loose tea filter bags if using). Let cool completely and set aside. Store any extra in an airtight container in the refrigerator for up to 5 days.
For the Vanilla Pear Cashew Cheese
- Place raw cashews in a container, cover completely with filtered water and soak overnight in the refrigerator for approximately 12 hours.
- Once soaked, bring 1 cup of water to a boil in a small saucepot. Turn off the heat, add the pyramid tea infusers (or loose tea filter bags if using), steep & cover for 20 min. After 20 minutes, remove and discard the pyramid tea infusers (or loose tea filter bags if using), reserving the tea liquid.
- Strain cashews and discard soaking liquid.
- Add 1 cup of the steeped tea and all remaining cheese ingredients into a blender. Blend on high until smooth and set aside. Store any extra in an airtight container in the refrigerator for up to 5 days.
For the toast
- Slice sourdough bread into ½-inch thick slices and toast.
- Spread a thick layer of Vanilla Pear Cashew Cheese, warmed to room temperature, onto each piece of toast.
- Top with a Vanilla Pear Compote, warmed to room temperature. Sprinkle on pomegranate seeds, a drizzle of honey, and a dusting of cinnamon. Enjoy and share with friends!
