Step 1: Fill the larger pitcher (the “chill” pitcher) with ice, stopping about an inch below the top to allow the second, smaller pitcher enough space to nest on top.
Step 2: Place the smaller pitcher (the “steep” pitcher) on top, letting it rest squarely above the larger, ice-filled pitcher below.
Step 3: In a separate pot or kettle, heat up to 24 ounces of filtered water to its optimal temperature, depending on the variety of tea you’re preparing (208 degrees Fahrenheit for a black tea or herbal tisane; 175 degrees for a green or white tea).
Step 4: Insert your pyramid tea infuser of choice into the steep pitcher, and then pour your hot water over it.
Step 5: Place the heat-resistant glass lid on top and let the tea steep (2-3 minutes for green or white tea; 5 minutes for black or 5+ for herbal) as you watch the water swirl with flavor.
Step 6: Remove the infuser, pour the hot tea from the small steeping pitcher into the large ice-filled pitcher. Give it a stir to redistribute the ice, and let it settle a few minutes until the tea is ice-cold.
Step 7: Once chilled, serve the tea in highball glasses.
